A teaspoon or two of balsamic vinegar can
awaken the flavor in a bland soup, stew, or sauce and bring
out flavor in strawberries.
Vinegar is an excellent ingredient for
marinades because it is a natural meat tenderizer.
When cooking seafood, it is better to add
a touch of vinegar when the seafood is already cooked to
enhance its flavor.
Vinegar is widely used as a food
preservative because it reduces the pH level of foods, which
helps avoid the growth of bacteria.
When using vinegar, do not use aluminum
pots or containers, which can react to the acidity. Use
glass instead.
