Ingredients: 
  • 1 (16 oz.) can chickpeas, drained
  • 1 beet, roasted
  • 2 Tablespoons Pompeian Robust Extra Virgin Olive Oil
  • 2 Tablespoons tahini paste
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic roughly chopped
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
Preparation: 
  1. Put chickpeas, beets, Pompeian Robust Extra Virgin Olive Oil, tahini, lemon juice, lemon zest, garlic, sugar, and salt in a blender.
  2. Pulse until smooth.
  3. Taste. Add more salt if desired.
