Chocolate Chip Walnut Cookies
Yields 36 cookies
  • ⅔ cup Pompeian Smooth Extra Virgin Olive Oil
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 ½ cups flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup chopped walnuts
  • 8 oz. chopped dark chocolate
  1. Preheat the oven to 350 degrees F.
  2. In the bowl of a stand mixer, combine the Pompeian Smooth Extra Virgin Olive Oil and the sugar until combined. Slowly add in eggs in at a time, mixing well after each addition. Beat in vanilla.
  3. In a small bowl, whisk together the flour, baking soda, and salt. Carefully add dry ingredients to wet ingredient until combined. Add in walnuts and chopped chocolate.
  4. Scoop dough by tablespoons and gently and loosely form into a ball. Place cookies on a lined baking sheet about 2 inches apart. Bake cookies for 14 minutes or until set. Remove the cookies from the oven and allow them to rest on the baking sheet for 1-2 minutes before removing to a rack to cool completely.
