Grain-Free Pumpkin Muffins


  • 1/2 cup pure maple syrup
  • 1 tsp. vanilla extract
  • 1/2 cup Pompeian Smooth Extra Virgin Olive Oil
  • 2 large eggs
  • 1 (15 oz.) can pumpkin puree
  • 2 1/2 cups almond flour
  • 1/2 tablespoon baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  1. Preheat oven to 350 degrees F and line a muffin tin with liners.
  2. In a large bowl whisk together maple syrup, vanilla, Pompeian Smooth Extra Virgin Olive Oil, eggs and pumpkin puree.
  3. Add in flour, baking soda, cinnamon, nutmeg, and salt. Gently fold the dry ingredients into the wet until just combined. Don’t overmix.
  4. Scoop batter using a 1/4 cup measuring cup into prepared muffin tin and bake in preheated oven for about 25 minutes, or until an inserted toothpick comes out clean.
