Healthier Mini Fruit Pizzas

HEALTHIER MINI FRUIT PIZZAS

Ingredients: 
  • ¼ cup Pompeian Smooth Extra Virgin Olive Oil
  • ¼ cup melted butter
  • ½ cup granulated sugar
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups whole wheat flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For the Greek Yogurt Frosting:

  • ½ cup non-fat plain Greek yogurt
  • 2 tablespoon honey
  • ½ tablespoon vanilla extract

For the Greek Yogurt Frosting:

  • Sliced strawberries
  • Sliced green grapes
  • Blueberries
  • Honey, for drizzling
Preparation: 
  1. Preheat oven to 350ºF and line a baking sheet with a silicone mat. Set aside.
  2. Whisk together Pompeian Smooth Extra Virgin Olive Oil through egg, then stir in flour, baking soda, baking powder, and salt.
  3. Use a large cookie scoop to create 12 even cookie dough balls.
  4. Place six onto the prepared sheet, then use the bottom of a glass to gently flatten them.
  5. Bake for 10 minutes, then transfer to a wire cooling rack to cool. Repeat with remaining cookies.
  6. Whisk together Greek yogurt, honey and vanilla extract.
  7. “Frost” each cookie with a spoonful of the Greek yogurt mixture, then top with fruit.
  8. Drizzle with honey and serve.
