Lisa's Chocolate Chip Cookies
Makes about 3 dozen cookies
  • 1 cup granulated sugar
  • 1 cup walnuts, chopped
  • 1 cup whole wheat pastry flour
  • 1 stick butter, softened
  • 1 to 1-1/2 cups chocolate chips
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup brown sugar, packed
  • 1/3 cup Pompeian Extra Light Tasting Olive Oil
  • 1-1/2 cups all-purpose flour
  • 2 eggs
  • 2 Tbsp. wheat germ
  • 2 tsp. vanilla extract

Preheat oven to 375o F. In a small bowl, combine the flours, wheat germ, baking soda, and salt, and set aside.

In another bowl, using a handheld mixer, beat together the softened butter, granulated sugar, and brown sugar. Add the Pompeian Extra Light Tasting Olive Oil, vanilla, and eggs, and beat until light and fluffy.

Stir the dry ingredients into the wet until combined. Then stir in the chocolate chips and walnuts.

Drop by rounded spoonfuls onto cookie sheets. Bake for 12-14 minutes or until slightly browned at the edges. Do not over bake. Allow to cool on the sheet for 2 minutes and then transfer to a wire rack to cool completely.
