Ingredients: 

Cupcakes

  • 16 oz. Can Pumpkin Pie Mix
  • 4 Eggs (Beaten)
  • 1-1/2 cups Sugar
  • 1 cup Pompeian Extra Light Tasting Olive Oil
  • 2 tsp. Vanilla Extract
  • 1 Tbsp. Ground Cinnamon
  • 1 tsp. Baking Soda
  • 1/2 tsp. Ground Ginger
  • 1/4 tsp. Baking Powder
  • 1/4 tsp. Ground Cloves
  • 1/4 tsp. Ground Nutmeg
  • 1/4 tsp. Salt
  • 2 cups Flour

Icing

  • 1 cup Confectioners Sugar
  • 1 tsp. Vanilla Extract
  • 5 drops Red Food Coloring
  • 8 oz. Cream Cheese, softened
  • 9 drops Yellow Food Coloring
  • 1 stick butter, softened
Preparation: 

Mix together the pumpkin, eggs, sugar, vanilla and Pompeian Extra Light Tasting Olive Oil. Then add in the other cupcake ingredients and mix well. Pour into paper cupcake cups and bake at 350° F for 25-30 minutes. Beat icing ingredients. As an option, stir in food coloring until icing is light orange in color. When the cupcakes are cool, frost with the icing and decorate with your favorite topping.
