Chilled Vegetarian Thai Peanut Noodle

Ingredients: 

For the Peanut Dressing

For the Chilled Noodles

  • ½ lb. noodles of choice
  • 1 (15 oz.) canned chickpeas, drained
  • 1-2 cups shredded carrots
  • 1-2 cups shredded coleslaw
  • 1-2 cups whole red bell peppers, thinly sliced
  • ¼ cup chopped cilantro
  • ¼- ½ cup chopped salted peanuts
  • 2 green onions, sliced
Preparation: 
  1. Place all peanut dressing ingredients into a mason jar. Seal and shake until well combined. Set aside.
  2. Place noodles, chickpeas, carrots, coleslaw, peppers, cucumber, cilantro, peanuts, and green onions into a large bowl
  3. Toss with as much dressing as desired, cover and chill in fridge.
