Cozy Gochujang Braised Chicken

Gochujang Braised Chicken
  • 2 carrots
  • 1 cup of chicken broth
  • 1 cup of water
  • 2 medium potatoes
  • 1 cup of diced yellow onion
  • Chicken drumsticks
  • 2 Tablespoons soy sauce
  • Pompeian Grapeseed Oil Spray
  • 2 teaspoon chili powder
  • 1 teaspoon sugar
  • 1 ½ Tablespoon Gochujang
  • 4 cloves of sliced garlic
  • 1 Tablespoon of fresh minced ginger
  1. Sear chicken in Pompeian Grapeseed Oil Spray for 3-5 minutes over medium high heat until evenly golden.
  2. Add garlic, onion and ginger and sauté until onions are translucent.
  3. Add chili powder, soy sauce, sugar and gochujang. Move everything around and cook gochujang out a little to increase flavor. Then add chicken broth, water, potatoes and carrots.
  4. Lower heat to medium/low and cook for 30 minutes. Give it a gentle stir halfway through time. (If it gets too dry, add ½ cup water.)
  5. Remove from heat, add sesame seeds (if desired).
