Grilled Eggplant Open-Faced Sandwich

Ingredients: 
  • 1 eggplant, sliced
  • Pompeian Organic Extra Virgin Olive Oil
  • 6 slices of French bread
  • 1 large tomato, sliced
  • Salt to season
Preparation: 
  1. Heat the grill to 375-400 degrees F
  2. Brush Pompeian Organic Extra Virgin Olive Oil on both sides of eggplant and French bread. Place the eggplant on the grill for 4-5 minutes per side. Grill the bread for 2-3 minutes on each side. 
  3. Place a slice of tomato on top of the grilled bread followed by the eggplant. Season with salt before serving warm.
