Ingredients: 

For the Chicken:

For the Greek Marinade:

For the Greek EVOO Dressing:

  • 1/2 cup Pompeian Robust Extra Virgin Olive Oil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon oregano
Preparation: 
  1. Whisk together all of the spices for the marinade with the Pompeian Robust Extra Virgin Olive Oil and transfer to a large freezer bag. Add the chicken tenders and let marinate for 4-8 hours.
  2. Remove chicken from the marinade and add 2 chicken tenders to each skewer stick.
  3. Heat a skillet over medium-high heat and add 2 Tablespoons of Pompeian Smooth Extra Virgin Olive Oil. Then add each skewer to the pan, allowing them to cook for 6 minutes on each side or until the juices run clear.
  4. Remove the chicken skewers from the heat, place them on top of a bed of fresh arugula and serve with olives.
  5. For the Greek Olive Oil dressing, whisk together all the spices with the Pompeian Robust Extra Virgin Olive Oil. Spoon the dressing over the lettuce and skewers, finally finishing the dish with a fresh squeeze of lemon.
